- Salads made with mayonnaise should not be kept in the heat for more than two hours. These salads need to be refrigerated. The best advice is to fill a large container with ice and place the salad bowls on top of the ice to keep them cool. Another idea is to keep the food in a cooler until you serve it.
- Don't forget to pack serving spoons for these salads. Pack some extra ones, in case someone drops them on the ground or they get misplaced.
- Keep meats separate from other foods.
- Leftovers need to be consumed as soon as possible and kept in the refrigerator at all times. Discard them after two days.
