I made this salad a few times in the last few weeks. Why? Because it seemed to be a great success with my family and also with my coworkers, who almost stole my lunch one day.

Ingredients
Poultry- I made this recipe with cooked chicken I prepared myself. However, you can also use turkey, which is great when you need to repurpose some leftover Thanksgiving roasted bird. Grapes or cranberries- Some people use grapes in the salad, I used cranberries, which are very popular and traditional for this salad.
Mayo, yogurt, or a combination of the two- Some recipes go full-on mayo, while others choose to mix mayo and yogurt for a lower-fat version of the salad.
Pecans- The recipe is traditional with pecans, but if you don't have access to pecans or don't like them, use walnuts.

Cranberry Pecan Chicken Salad
Ingredients
- 3 cups cooked shredded chicken/turkey
- ¾ cup mayonnaise
- ¾ cup chopped celery
- ¾ cup chopped pecans
- ½ cup dried cranberries
- salt and pepper to taste
Instructions
- Shred the cooked chicken meat.
- Chop the celery and pecans.
- In a medium bowl place chicken, celery, pecans, dried cranberries.
- Add the mayo and stir to coat all the ingredients.
- Taste for salt and pepper.
- Refrigerate.
- Serve on crackers as appetizer or as is. Makes a great lunch.
