I made this salad a few times in the last few weeks. Why? Because it seemed to be a great success with my family and also with my coworkers who almost stole my lunch one day.
They love coming to my desk and sniffing my lunch asking questions about what I brought that day.
With this salad though, after they tasted it, they went crazy about it. It is quite a simple salad and I do not believe it is anything special about it, except for the fact that most of my ingredients were fresh and some of them organic.
I have to say, and you probably know that already, there is no comparison between old, stale chicken salad that you get at a grocery store or even restaurant and the one you can make at home.
Chicken/turkey salad with pecans and cranberries is a classic American salad that everyone loves.
The secret to having a delicious chicken/turkey salad is not what kind of ingredients you use, but the quality of them. The celery has to be crunchy and all ingredients fresh.
I even made my own mayo, but this is another story for another time.
Tips to make a great salad:
Poultry– I made this recipe with cooked chicken I prepared myself. However, you can also use turkey, which is great when you need to repurpose some leftover Thanksgiving roasted bird. Roasted chicken from the rotisserie is awesome, especially when you want to do a shortcut on this recipe. It saves time.
Grapes or cranberries– Some people use grapes in the salad, I used cranberries, which are very popular and traditional for this salad.
Mayo, yogurt or a combination of the two– Some recipes go full on mayo, while others choose to mix mayo and yogurt for a lower fat version of the salad.
Pecans– The recipe is traditional with pecans but if you don’t have access to pecans or don’t like them, use walnuts.
How To Serve This Cranberry Pecan Chicken Salad

- On delicious croissants or crusty bread
- On crackers for lunch

- 3 cups cooked shredded chicken/turkey
- 3/4 cup mayonnaise
- 3/4 cup chopped celery
- 3/4 cup chopped pecans
- 1/2 cup dried cranberries
- salt and pepper to taste
- Shred the cooked chicken meat.
- Chop the celery and pecans.
- In a medium bowl place chicken, celery, pecans, dried cranberries.
- Add the mayo and stir to coat all the ingredients.
- Taste for salt and pepper.
- Serve on crackers as appetizer or as is. Makes a great lunch.
