I made this salad few times in the last few weeks. Why? Because it seemed to be a great success with my family and also with my coworkers who almost stole my lunch one day. They love coming to my desk and sniffing my lunch asking questions about what I brought that day.
With this salad though, after they tasted it, they went crazy about it. It is quite a simple salad and I do not believe it is anything special about it, except for the fact that most of my ingredients were fresh and some of them organic. I have to say, and you probably know that already, there is no comparison between old, stale chicken salad that you get at a grocery store or even restaurant and the one you can make at home.
Chicken/turkey salad with pecans and cranberries is a classic American salad that everyone loves. The secret to having a delicious chicken/turkey salad is not what kind of ingredients you use, but the quality of them. The celery has to be crunchy and all ingredients fresh.
I even made my own mayo, but this is another story for another time. However, this salad can be made with all kinds of chicken meat. You can make it with turkey too, which is great when you need to repurpose some leftover Thanksgiving roasted bird. For this recipe, I boiled the meat, but feel free to use roasted chicken or turkey instead. Some people use grapes in the salad, I used cranberries, which are very popular and traditional for this salad.

- 3 cups cooked shredded chicken/turkey
- ¾ cup mayonnaise
- ¾ cup chopped celery
- ¾ cup chopped pecans
- ½ cup dried cranberries
- salt and pepper to taste
- Mix all the ingredients well and taste for salt and pepper.
