- Potatoes (I used baby potatoes, but any potato is great)
- Chicken meat (chicken breast or skinless chicken thighs are perfect)
- Spanish chorizo sausage is the little star here, as it brings flavor and color to the dish. Use a spicy Spanish chorizo if you prefer, or a milder sausage, like a Kielbasa.
- Garlic cloves
- Cherry tomatoes (because they are sweet)
- Olive oil (or any vegetable oil you like)
- Salt and black pepper and other spices you like (sweet or smoked paprika, more garlic powder, thyme, etc)
How to make this oven-baked chicken dish
Step 1. Start by preheating the oven to 400F.
Step 2. Place the chopped baby potatoes in a large baking dish on one layer, if possible.
Step 3. Add chopped garlic, chicken pieces, and chorizo.
Step 4. Sprinkle salt, pepper, and paprika, and drizzle everything with olive oil.
Step 5. Toss them all together, then bake for 20 to 25 minutes. Then, add the cherry tomatoes and bake for another 25 to 30 minutes.

Easy Oven-Baked Chicken and Chorizo with Potatoes
Ingredients
- 1 ½ pounds baby potatoes washed, or small potatoes cut into cubes
- 4-5 garlic cloves peeled and roughly chopped
- 1 ½ pounds skinless boneless chicken (breast or thighs, cut into bite-size pieces)
- 1 teaspoon paprika
- ½ teaspoon salt or to taste
- ¼ teaspoon black pepper
- 4 tablespoons extra virgin olive oil
- ½ pound Spanish chorizo sliced
- ½ pound cherry tomatoes
Instructions
- Preheat your oven to 400°F (200°C).
- In a large baking dish, place the baby potatoes and add the garlic.
- Add the chicken and chorizo to the dish with the potatoes.
- Season with paprika, salt, and pepper.
- Drizzle everything with olive oil and give it a good mix to ensure everything is evenly coated.
- Bake in the preheated oven for about 20 minutes, or until the chicken and potatoes are nearly cooked through.
