Ingredients

baby potatoes
washed, or small potatoes cut into cubes

garlic cloves
peeled and roughly chopped
1 ½

skinless
boneless chicken (breast or thighs, cut into bite-size pieces)

paprika

teaspoon
salt
or to taste

extra virgin olive oil

Spanish chorizo
sliced

pound
cherry tomatoes
Instructions
Preheat your oven to 400°F (200°C).
In a large baking dish, place the baby potatoes and add the garlic.
Add the chicken and chorizo to the dish with the potatoes.
Season with paprika, salt, and pepper.
Drizzle everything with olive oil and give it a good mix to ensure everything is evenly coated.
Bake in the preheated oven for about 20 minutes, or until the chicken and potatoes are nearly cooked through.
Remove from the oven, add the cherry tomatoes, and stir them in.
Return the dish to the oven and continue baking for another 20 minutes, or until the tomatoes have roasted and everything is nicely cooked through.
Serve warm and enjoy the burst of flavors!
