Savory Quick Bread With Cheese and Olives
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 4 large eggs
- ½ cup vegetable oil
- ½ cup dry white wine
- ¾ cup green or black pitted olives sliced

Instructions
- Preheat oven to 350F/180C.
- In a medium bowl, mix the flour with the salt and baking powder.
- Add eggs, oil, and wine and mix well. Add olives, red pepper, ham or bacon, cheese, and stir to combine.
- Place the batter into a loaf baking pan and bake for 45 minutes or until golden brown on top.
- Allow it to cool, remove it from the pan and serve slices of it.

Thank you for sharing. This is the best. Quick and easy, the equivalent of fridge soup. You really can use just about anything in it.
It freezes very well and you have a nice tasty loaf for summer salad days, hot soup lunches,or for unexpected but always welcome guests, goes great with charcuterie and cheese plate. This is just so good.

It looks like you shredded the cheese. Could this be done with cheese cubes?

I never tried, but I think that you should probably chop the cubes as small as you can and add them to the batter. I am not sure how big the cubes are, anyway, but I would not add big chunks of cheese in the batter.

Hi, You do not need to beat the eggs before, just add them together with the oil and wine and mix well. Also, you will need a rectangular-shaped loaf pan, usually 9.5 x 5 Inch size.
