You will need the following ingredients:
Sausage- like Spanish chorizo, or mild Italian sausage.
Pasta- Could be any kind of pasta shape you like, there are no rules here.
Cheese- I used all kinds of cheese in the past, as I make this dish quite often. Manchego cheese is the traditionally used one, but other types of cheese are perfectly acceptable. Cheddar or a combination of cheddar, mozzarella, and other cheese works as well.
Tomato sauce- I like using plain tomato sauce, as I prefer using my own spices and controlling the salt in the recipe.
Garlic and onion- these flavors the sauce and also the pasta.
Salt and pepper to your taste.
How to make this Cheesy Chorizo and Tomato Baked Pasta:
To start this dish, make sure you have all ingredients. Also, preheat the oven to 350F/180C.
Chop the onions and garlic and slice the chorizo thinly.
The Spanish chorizo is cooked with onions and garlic first.
When the onions and garlic become translucent, you can add the tomato sauce and the herbs.
While the onions, garlic, and chorizo are getting friendly with each other, cook the pasta according to the instructions on the package.
Shred the cheese. I had a chunk of cheese that I wanted to use in the recipe, but if you have already shredded cheese, go ahead and use it.
When the pasta is cooked, drain the water. Add the tomato and chorizo mixture to the pasta.
Place the pasta with the sauce in a baking dish.
Add the shredded cheese on top.

Place the dish in the oven and finally, bake for 20-30 minutes until the cheese is melted and the edges are bubbly and golden.

Ingredients
- 1 chopped onion
- 4-5 Tablespoons olive oil
- 9 oz/250g Spanish Chorizo or any kind of sausage you like and have available
- 1 14 oz. (398 mL) can tomato sauce or crushed tomatoes
- 1 12 oz.(400g) package dry penne pasta
- 2 cups(250g) shredded cheese(Manchego, parmesan, mozzarella, cheddar etc)
- salt and pepper to taste
- 2 garlic cloves crushed
- ½ teaspoon oregano
- ½ teaspoon dry basil
Instructions
- Preheat the oven to 400F/200C.
- Place an oiled medium sized skillet on high heat on the stove.
- Add the onion and sauté until transparent. Add the sliced Spanish chorizo to the skillet.
- Sauté for 2-3 minutes.
- Next, add the tomato sauce, crushed garlic, oregano, basil, salt and pepper to taste and let simmer for a minute.
- Meanwhile, cook the pasta according to the package.
- When the pasta is cooked, drain the water and add it to the tomato and chorizo mixture.
- Place the pasta with the sauce in a baking dish and add the shredded cheese on top.
- Finally, bake for 20-30 minutes until the cheese is melted and the edges are bubbly and golden.
