Ingredients
Here’s what you’ll need to make these flavorful cookies (for full amounts, check the recipe card at the bottom of this article):
- Butter: The foundation of these cookies. Use unsalted butter to control salt levels.
- Granulated Sugar: Sweetens the dough. For a softer texture, you can use light brown sugar instead, which adds a hint of caramel flavor.
- Vanilla Extract: Enhances the overall flavor.
- All-Purpose Flour: Provides structure to the cookies. For a gluten-free version, use a gluten-free flour blend.
- Unsweetened Cocoa Powder: Adds rich chocolate flavor. Use Dutch-processed cocoa for a deeper color and flavor (my favorite).
- Instant Coffee Powder: The coffee element of mocha. Espresso powder is an excellent alternative for a stronger coffee kick.
- Salt: Balances sweetness and enhances the other flavors. Skip if using salted butter.
- Chopped Walnuts: Adds texture and a nutty flavor. You can use pecans, almonds, or hazelnuts instead.
- Powdered Sugar (for dusting): Provides a sweet, snowy finish. You can skip this or use granulated sugar for a crunchy coating.
How To Make Mocha Walnut Butter Cookies
Step 1. Cream the butter with sugar: In a large bowl, using an electric mixer or the bowl of a stand mixer, cream butter, sugar, and vanilla at medium speed until light and fluffy. This step is crucial for a tender texture.
Step 2. Mix the Dry Ingredients: In a separate medium bowl, combine flour, cocoa powder, instant coffee, and salt. Gradually add this flour mixture to the creamed butter, mixing until well combined at low speed.
Step 3. Add the Walnuts: Add the finely chopped walnuts and make sure they are evenly distributed.
Step 4. Chill the Dough: Cover the dough and refrigerate for at least an hour or overnight. Chilling helps the dough firm up and prevents excessive spreading during baking.
Step 5. Form the Cookies: Preheat your oven to 350°F (175°C) and place parchment paper on a cookie baking sheet. Set aside. Roll the chilled dough into 1-inch balls and put them on the cookie sheet, leaving space between each. If you don't have parchment paper, use an ungreased cookie sheet.
Step 6. Bake: Bake for 12–15 minutes in the preheated oven. Let them cool on the baking sheet for 5 minutes before transferring to a cooling rack.
Step 7. Dust with Powdered Sugar: While still warm (but not hot), dust the cookies generously with powdered sugar( confectioners' sugar)
Expert Tips
- Chill Thoroughly: Chilling the cookie dough is non-negotiable. It helps the cookies maintain their shape and enhances the flavors.
- Use Fresh Ingredients: Fresh butter, cocoa, and coffee granules make a noticeable difference in flavor.
- Don’t Overbake: When removed from the oven, the cookies should look set but slightly soft. They firm up as they cool.
Variations
- Spiced Twist: Mix in ½ teaspoon of cinnamon or cardamom for a warm, spicy undertone.
- Nut-Free Version: Omit the walnuts or replace them with half a cup of chocolate chips.
- Extra Mocha Flavor: Add an additional teaspoon of instant coffee for a bolder flavor.
