This recipe for Chicken Marbella is not a new one. I decided to post it here because I fell in love with it, and it is one of my favorite recipes when I entertain.

A delicious, classic American recipe that is great for entertaining. Very elegant and easy to make, perfect for the holidays!

Ingredients

– Chicken parts - legs, thighs, breast – Garlic – Dried oregano – Salt & ground pepper – Red wine vinegar – Olive oil – Prunes – Spanish green olives – Capers & Bay leaves – Brown sugar – White wine – Italian parsley

How to make

In a large bowl, combine chicken, garlic, oregano, pepper, salt, vinegar, olive oil, prunes, olives, capers + juice and bay leaves. Cover and marinate it overnight in the fridge.

On the next day, preheat the oven to 350F. Arrange chicken in a single layer in one or two large, shallow baking pans and spoon marinade over it evenly.

Sprinkle chicken pieces with brown sugar and pour white wine around them. Bake for 50 minutes to 1 hour, and baste the chicken frequently with pan juices.

Transfer chicken, prunes, olives, and capers to a serving platter. Moisten with a few spoonfuls of pan juices and add parsley or cilantro. Pass remaining pan juices in a sauceboat.

To serve Chicken Marbella cold, cool to room temperature in cooking juices before transferring to a serving platter.

If chicken has been covered and refrigerated, return to room temperature before serving. Spoon some of the reserved liquid over the chicken.
