Pumpkin Pie Bars are a dessert version of the classic pumpkin pie. You can have smaller portions of this delicious and decadent dessert without the guilt of eating too  much.

INGREDIENTS: Crust and Top Crumble: – Flour – Nuts – Granulated sugar – Dark brown sugar  – Cinnamon – Unsalted butter Pumpkin filling: – Pumpkin – Sweetened condensed milk – Eggs – Ground allspice – Salt – Cinnamon

STEP 1. Preheat oven, then in a medium mixing bowl, combine flour, nuts, sugars, and cinnamon.

STEP 2. Add the cold butter, cut in small cubes, and mix until you obtain a crumbly, sandy texture.

STEP 3. Make sure you reserve some of this mixture to use later, as crumbs over the filling.

STEP 4. Pat the remaining mixture on the bottom of an ungreased baking dish and set it aside.

STEP 5. Pumpkin filling: In a large mixing bowl, place the pumpkin puree, sweetened condensed milk, beaten eggs, salt, and spices. Mix them well.

STEP 6. Pour the mixture over the crust and bake it for about 15 minutes.

STEP 7. Remember the crumbs we set aside? While the pan is in the oven, mix the crumbs with some flour. When the 15 minutes are up, remove the pan from the oven and sprinkle the crumbs over the pumpkin mixture.

STEP 8. Place the pan back in the oven and bake.  Allow the pumpkin bars to cool in the pan for about 10 minutes. Serve them simple or with whipped cream or ice cream.
