brown rice cooked
use ⅔ cups uncooked brown rice +2cups water

wild rice cooked
use ⅓ cup uncooked wild rice+1 cup water

big apple diced or 1-2 small apples

celery stalks chopped
1
red bell pepper
or roasted peppers chopped

green onions chopped
or 1 small red onion

walnuts chopped bite size

chicken cubed cooked
or turkey

Vinaigrette:

apple cider vinegar

Instructions
In a large bowl, combine brown rice, wild rice, apple, celery, green onion, walnuts, chicken, and parsley.
In a small bowl whisk together apple cider vinegar, and olive oil. Add salt and pepper to your taste.
Pour the vinaigrette over the salad and mix to coat everything well.
Serve at room temperature or chilled.
