This recipe of easy banana doughnuts is an awesome way to use ripe bananas that are sitting around. It is also a great recipe to put together for a brunch. Are you a grandma and kids are coming over for a visit? Make these!
In a mixing bowl, combine together flour, sugar, baking powder, salt.
Separately, combine the eggs, milk, olive oil and vanilla. Beat lightly.
Pour the liquid ingredients over the dry ones and mix together.
Mash the bananas with a fork and add them to the batter.
Heat up oil to a temperature between 360-375F.
Using a tablespoon, pour the batter in the oil and let the doughnut cook for about 2 minutes on each side until brown, on medium heat.
Remove them from the pan and drain them on paper towels.
Tip: Do not crowd the doughnuts in the pan. 3-4 doughnuts should be enough for one batch.
Serve them hot or cold dusted in powder sugar.
Notes
Store: Place the doughnuts in an airtight container lined with a paper towel to absorb excess moisture. Add another paper towel on top before sealing the container. Keep the container in a cool, dry spot away from direct sunlight for up to 2 days.
