CEDAR PLANKED SALMON WITH EGGPLANT AND GREENS

Greens : -  Baby spinach - Arugula - Parsley  - Red onion  - Red bell pepper  - Yellow bell pepper –Radishes

Vinaigrette: - Extra virgin olive oil - Ginger powder - Oange zest and juice - Salt and pepper to taste Chips for texture: - Veggie chips

How To Make

Make the eggplant dip: – Roast eggplants. Chop them fine or use a vertical blender to obtain a paste. – Add olive oil, salt and lemon juice. Add onion.

Make the green salad: – Combine  greens with the veggies. – Make the  vinaigrette. – Pour over the salad.

Assemble the plates: – Place a generous amount of eggplant on each plate and spread it, and a portion of salad on top of it. – Decorate with veggie chips and pieces of salmon.
